September 2013 Recipes

At this point, I believe my postings will be more sporadic (for the next few months, at least). The Bump is due any day now. I hope to continue to bring great resources and information, but posts might be longer or shorter depending on how much time I have and how often I’ll be able to post.   1. These look great. Checked out the granola recipe. I’d add some oats and maybe some wheat germ (not gluten free, then) to it, but loved the rest of it. Coconut and coconut oil would make it great. Dry some of your own fruit, or get dried fruit from the store and add in.

  2. The Pho is interesting too. I’d eliminate the soy (migraines), but keep the miso or another bean paste that didn’t use soy. I can get fresh noodle here in Hawaii, or you can go to an Asian shop and get the fresh noodle, which is so much better than the dried. But use rice noodle if it’s dried. I’ve tried both rice and soba, and like the rice best. Yakisoba noodles will work if you’ve nothing else, and Canton (wheat) noodle as a last resort. I’d rather use Bihon (thin dry rice noodle) if I can.

    If you aren’t worried about being vegan, but want vegetarian, add some boiled egg. We make our own versions of Pho quite often here at home.
